Mystina's Mac~N~Cheese (Vegan)

20 minutes


1/3 c Raw Cashews

14 oz can Light Coconut Milk

1/4 c Nutritional Yeast Flakes

3 tsp Sea Salt 

1 1/2 tsp Onion Powder

3/4 tsp Granulated Garlic

1/4 c Pimentos

2 c Water

2 Tbsp Cornstarch

Black Pepper to taste

2 1/2 c Elbow Macaroni 



Set your macaroni to cooking while you blend the sauce. Add the ingredients in the order above blending very well. Drain your macaroni and place back in the pot with the heat set on medium. Run your blender one more time before pouring the sauce over the macaroni. Stir until it is the desired thickness if using right away, if not stop just before desired thickness as the sauce will thicken as it sits. You can also use the sauce for nachos, broccoli cheese potatoes, or make broccoli cheese soup by adding steamed broccoli to it.
